From The Perfect Cookbook
24 large uncooked prawns
, peeled and deveined
80 g unsalted butter (this is a LOT, we figure on using less next time)
2 tbsp olive oil
3 cloves garlic, finely chopped
1/2 large red chilli, seeded and finely chopped
2 tbps flat-leaf parsley, chopped
juice of 1 lemon
1 tbsp flat-leaf parsley, chopped, extra
2 tsp finely grated lemon zest
Melt the butter and olive oil in a large frying pan or wok over medium heat. Add the garlic and chilli and cook, stirring, for
3 minutes. Add the prawns and cook, untouched, for 2 minutes. Turn the prawns, add the parsley and squeeze over the lemon juice. Cook for a further 2-3 minutes, or until the prawns are pink. Season with sea salt and freshly ground black pepper.
In a small bowl, combine the extra chopped parsley and lemon zest, and sprinkle this mix
ture over the prawns. Serve at once with good crusty bread to mop up the juices.
Spicy Thai Basil and Lime Tiger Prawns
So far this has been my favourite summer recipe. Yaki-Onigiri (background), which has replaced potatoes on the grill in our house, grilled red peppers and spicy Thai basil and lime tiger prawns. Optional (not pictured) Corona with lime.
For the marinate; 1/4 c lime juice, 1/4 c fish sauce, 1 tsp sugar, 1-2 minced clove garlic, 2 tbsp olive oil, 1-2 finely chopped red chilies with seeds removed, and a handful of fresh basil and cilantro. I finely chopped the herbs but ended up giving it all a spin in the food processor in the end.
